About this Strawberry Sorbet

  • Easy to make: This sorbet is the easiest thing ever to make – and who doesn’t want that during the summer? All you do is mix frozen berries and fresh mint together in a high speed blender. Add just enough water to get things going, and there ya have it – strawberry sorbet! If it’s not sweet enough for you, you can add a bit of your favorite sweetener, but I think it’s absolutely perfect just the way it is.
  • Beautiful: Speaking of perfection, can we talk just for a second about the color of this stuff? Isn’t it beyond gorgeous? I just love it.
  • Refreshing and healthy: This is the ultimate summer treat! And it’s full of fruit so you can feel great about eating it.

Make it your Own

  • Switch up the herbs: Try basil instead of mint!
  • Leave out the herbs: You can easily make this with just strawberries. Or add a splash of vanilla extract to give it some depth.
  • Add different fruit: Try adding in different types of frozen fruit. Consider raspberries, mango, or bananas.

All you need are a blender, two ingredients, and five minutes to make refreshing and healthy strawberry sorbet with mint.

Ingredients

  • 16 ounces frozen strawberries (34 cups)
  • ½ cup water
  • ¼ cup loosely packed fresh mint, more for garnish if desired

Instructions

  • Blend in a high speed blender, pushing down sides as needed. Keep repeating this until sorbet is smooth. If needed, add a few extra drops of water – little by little. If you overdo the water, you’ll have a smoothie, not sorbet.

  • Serve immediately garnished with fresh mint.

Notes

  • If sorbet is too tangy for your taste, add a small amount of sweetener of your choice.
  • Serving size: 1/2 cup.

FAQs

What is strawberry sorbet made of? ›

Place strawberries and sugar into a food processor and pulse machine on and off until fruit is broken up. Add water and continue processing until you have a smooth puree. Transfer to a container and freeze for 2 hours, or until firm enough to scoop.

How long does sorbet take to churn? ›

Churn the sorbet.

Pour the chilled base into the ice cream machine and churn. Continue churning until the sorbet is the consistency of a thick smoothie. This typically takes between 10 and 15 minutes in most machines.

What is the secret to good sorbet? ›

The Master Ratio

If you don't know the exact sugar content of your fruit, the best thing you can do is play it safe. A sugar concentration between 20% to 30% will generally produce a scoopable, creamy sorbet. * Add less and your sorbet is too icy to scoop; add more and it may never freeze.

How does sorbet get creamy? ›

Without fat from dairy or eggs, it's the suspension of sugar within the fruit purée that allows the sorbet to churn into something with a creamy mouthfeel. You need 20-30% sugar in your sorbet, which will come from your fruit plus some added sugar.

Why is my homemade sorbet so hard? ›

Too little sweetener and your sorbet will be icy; too much sweetener and it will be mushy. Churn or stir your sorbet while it's freezing to prevent large ice crystals from forming. Please note the “Easy (no keep)” method doesn't require any sweetener or churning/stirring.

Is sorbet healthier than ice cream? ›

Not only is sorbet a healthier alternative to ice cream, but it is also a dessert that can be enjoyed guilt-free. With no eggs or cream present in the recipe, sorbet contains fewer calories and less fat compared to traditional ice cream.

Why add egg white to sorbet? ›

The optional egg white helps to stabilize, emulsify, and preserve the texture of the sorbet if you are going to keep it in your freezer for a few days.

Why do you put lemon in sorbet? ›

Lemon Water

It may seem like an overwrought step but it really helps. It gives the sorbet even more lemon flavor and just a touch of bitterness which nicely balances the sweet and sour. There is so much flavor in lemon peel it would be a waste not to take advantage of it.

What can I use to stabilize my sorbet? ›

Sorbet is a non-dairy frozen dessert made from puréed fruit or fruit juice mixed with water and sugar. It should be made up of very fine grains, and contain no large crystals of ice. In some countries, a small amount of milk might be added to sorbet, but this is not the case in the UK.
